The star of the show, cowboy butter, is a compound butter that originated from the hearty culinary traditions of the American West. This flavor-packed concoction typically includes butter blended with a medley of spices, fresh herbs, garlic, and sometimes even a splash of citrus. Its versatility is what makes cowboy butter such a treasure—while it pairs exceptionally well with steak, it can also enhance the flavors of grilled chicken, roasted vegetables, and even fish, making it a go-to condiment for a variety of dishes.

Ingredients

1 lb flank steak

1 tablespoon olive oil

Salt and pepper to taste

8 slider buns

4 tablespoons cowboy butter (see recipe below)

½ cup shredded cheddar cheese

½ cup pickled jalapeños (optional)

Fresh cilantro leaves for garnish

Cowboy Butter:

½ cup unsalted butter, softened

1 clove garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for spice preference)

Juice of ½ lemon

Salt and pepper to taste

Instructions

Prepare the Cowboy Butter: In a bowl, combine the softened butter, minced garlic, parsley, smoked paprika, cayenne, lemon juice, salt, and pepper. Mix until well blended and creamy. Set aside or refrigerate until ready to use.

Cook the Flank Steak: Preheat a grill or grill pan to medium-high heat. Rub the flank steak with olive oil and season generously with salt and pepper. Grill the steak for about 4-5 minutes per side, depending on thickness and desired doneness. Remove from heat and let it rest for about 5 minutes.

Slice the Steak: After resting, slice the steak against the grain into thin strips to ensure tenderness.

Assemble the Sliders: Toast the slider buns lightly on the grill or in a toaster. Spread a tablespoon of cowboy butter on the bottom half of each bun.

Add Steak and Toppings: Layer a slice of steak on each bun, followed by a sprinkle of shredded cheddar cheese and pickled jalapeños if using. Top each with the bun's other half, spreading a bit more cowboy butter on top if desired.

Serve: Plate the sliders and garnish with fresh cilantro leaves. Serve warm with any remaining cowboy butter on the side for dipping.
