Cowboy Butter Smashed Potatoes

2 pounds baby Yukon Gold potatoes

½ cup unsalted butter, softened

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

½ teaspoon cayenne pepper

Salt and black pepper to taste

½ cup grated Parmesan cheese

Freshly cracked black pepper for garnish

Prep the Potatoes: Scrub the baby Yukon Gold potatoes under running water, then place them in a large pot. Cover with cold salted water and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Make the Cowboy Butter: While the potatoes are boiling, in a medium mixing bowl, combine the softened butter, minced garlic, chopped parsley, chopped chives, Dijon mustard, smoked paprika, cayenne pepper, salt, and black pepper. Mix well until all ingredients are fully incorporated.

      Smash the Potatoes: Once the potatoes are tender, drain them and let them cool slightly. On a large baking sheet lined with parchment paper, place the potatoes and lightly smash each one with a fork or potato masher, making sure not to break them apart completely.

        Season and Bake: Preheat your oven to 425°F (220°C). Spoon generous amounts of the cowboy butter over each smashed potato. Sprinkle the grated Parmesan cheese evenly over the potatoes. Bake in the preheated oven for 15-20 minutes, or until the potatoes are crispy and golden brown.

          Serve: Remove the potatoes from the oven and let them cool for a couple of minutes. Garnish with freshly cracked black pepper and an extra sprinkle of parsley or chives if desired.
