1 lb (450g) chicken breast, cut into bite-sized pieces

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup unsalted butter, melted

2 tablespoons fresh parsley, chopped

2 tablespoons fresh cilantro, chopped

1 tablespoon lemon juice

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

Skewers (soaked in water if wooden)

Instructions
 

In a large bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Add the chicken pieces and toss to coat thoroughly. Allow the chicken to marinate for at least 30 minutes in the refrigerator.

    While the chicken is marinating, prepare the cowboy butter sauce. In a separate bowl, mix the melted butter with chopped parsley, cilantro, lemon juice, Dijon mustard, and Worcestershire sauce. Stir well to combine and set aside.

      Preheat your grill or grill pan to medium-high heat.
