1 can (15 oz) pinto beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 medium onion, diced

3 cloves garlic, minced

1 small bell pepper (any color), diced

1 cup diced tomatoes (canned or fresh)

2 tablespoons chili powder

1 teaspoon cumin

1 tablespoon brown sugar

1 tablespoon olive oil

Salt and pepper to taste

1 cup cornbread mix

1/2 cup milk

1 large egg

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the pinto beans, black beans, kidney beans, corn, and diced tomatoes to the skillet. Stir to combine.

        Season the mixture with chili powder, cumin, brown sugar, salt, and pepper. Mix well and let it cook on medium heat for about 10-15 minutes, allowing the flavors to meld.

          While the bean mixture is simmering, preheat your oven according to the cornbread mix package instructions.

            In a separate bowl, combine the cornbread mix, milk, and egg until just blended.

              Pour the cornbread batter evenly over the simmering bean mixture in the skillet.

                Transfer the skillet to the preheated oven and bake according to the cornbread mix instructions or until golden brown and a toothpick inserted comes out clean, which usually takes about 20-25 minutes.

                  Once done, let it cool for a few minutes before serving.
