1 cup cottage cheese

3 large eggs, separated

1/4 teaspoon cream of tartar

1/2 teaspoon garlic powder (optional)

1/4 teaspoon salt

1/4 teaspoon baking powder (for fluffiness)

Instructions
 

Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.

    In a mixing bowl, combine the cottage cheese and the egg yolks. Mix well until smooth and creamy; if you want to add garlic powder, include it at this stage.

      In a separate bowl, use an electric mixer to whip the egg whites and cream of tartar together until soft peaks form. This should take about 3-5 minutes.

        Gently fold the egg white mixture into the cottage cheese mixture in thirds, being careful not to deflate the egg whites. This is what gives the bread its cloud-like texture!

          Add the salt and baking powder, and fold just until incorporated.

            Use a spoon or a small ice cream scoop to drop dollops of the batter onto the prepared sheet, forming round “clouds.” Flatten them slightly if desired.

              Bake for 25-30 minutes, or until the tops are golden brown and the bread is firm to the touch.

                Allow the cloud bread to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
