1 box (8.5 oz) cornbread mix

1 cup milk

1 cup shredded cheddar cheese

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 small onion, chopped

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the oven to 400°F (200°C). Grease a 9x13 inch casserole dish with cooking spray or a bit of olive oil.

    In a large skillet over medium heat, heat the olive oil. Add the chopped onion and diced red bell pepper and sauté until they soften, about 5 minutes.

      Stir in the black beans, corn, cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes until everything is heated through. Remove from heat and set aside.

        In a separate bowl, combine the cornbread mix, milk, and half of the shredded cheddar cheese. Stir until just blended—don't overmix.

          Pour half of the cornbread batter into the bottom of the greased casserole dish, spreading it evenly.

            Layer the vegetable and bean mixture over the cornbread layer, followed by the remaining cornbread batter poured on top.

              Sprinkle the remaining cheddar cheese evenly over the top.

                Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

                  Allow the casserole to cool for a few minutes before slicing.

                    Garnish with sliced green onions and fresh chopped cilantro before serving.
