Ingredients
  

4 ears of fresh corn

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

¼ cup grated Parmesan cheese (optional)

Fresh cilantro or parsley, for garnish

Instructions
 

Preheat your grill or oven to 400°F (200°C).

    Carefully cut the corn in half lengthwise, then cut each half into quarters to form rib-like pieces. You should get 8 pieces from each ear of corn.

      In a large bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Whisk until fully combined.

        Add the corn ribs to the bowl and toss well, ensuring that all pieces are evenly coated with the spice blend.

          If using a grill, place the corn ribs directly on the grill grates. Grill for about 10-15 minutes, turning halfway, until the corn is nicely charred and tender. If using an oven, place the corn ribs on a lined baking sheet and roast for 15-20 minutes, flipping once.

            Once cooked, if using Parmesan cheese, sprinkle it over the hot corn ribs and return them to the grill or oven for an additional 1-2 minutes to melt the cheese.

              Remove from heat and let them cool slightly. Garnish with fresh cilantro or parsley before serving.
