Ingredients

1 cup sweet corn kernels (fresh or frozen)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/2 teaspoon baking powder

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup buttermilk (or milk with 1 tsp vinegar mixed)

1 large egg

2 tablespoons chopped fresh chives (optional)

Olive oil for frying

Sour cream or Greek yogurt for serving (optional)

Instructions

Prepare the Batter: In a large bowl, combine the flour, cornmeal, baking powder, paprika, garlic powder, salt, and black pepper. Mix well to ensure all the dry ingredients are evenly distributed.

Mix Wet Ingredients: In another bowl, whisk together the buttermilk and the egg until well combined.

Combine Ingredients: Pour the wet mixture into the dry ingredients and gently fold until just combined. Add the sweet corn and chopped chives, stirring until the corn is evenly coated in the batter. Be careful not to over-mix.

Heat Oil: In a large frying pan, heat about 1/4 inch of olive oil over medium heat. The oil should be hot enough that a drop of batter sizzles immediately when added.

Fry Fritters: Drop spoonfuls (about 2 tablespoons each) of the batter into the hot oil. Flatten them slightly with the back of the spoon to form patties. Cook in batches, ensuring not to overcrowd the pan. Fry for 3-4 minutes on each side until golden brown and crispy.

Drain Excess Oil: Once cooked, remove the fritters from the pan and place them on a plate lined with paper towels to absorb excess oil.

Serve: Enjoy the fritters warm, accompanied by a dollop of sour cream or Greek yogurt for dipping, if desired.

                Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4

                  - Presentation Tips: Arrange the fritters on a platter with fresh herbs sprinkled on top, and serve with a small bowl of dipping sauce at the center for an appealing display.
