4 cups fresh corn kernels (or frozen if not in season)

1 medium yellow onion, diced

2 cloves garlic, minced

1 medium potato, peeled and diced

1 medium carrot, diced

4 cups vegetable broth

1 cup coconut milk (for creaminess)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon thyme

Salt and black pepper to taste

Fresh chives or parsley for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and cook for about 5 minutes until softened and translucent.

    Add minced garlic, diced carrot, potato, and smoked paprika, stirring well to combine. Sauté for another 3-4 minutes until the vegetables are slightly tender.

      Stir in the corn kernels, vegetable broth, and thyme. Bring the mixture to a boil, then reduce to a simmer. Cover and let cook for about 15-20 minutes, or until the carrots and potatoes are fork-tender.

        Using an immersion blender, blend the chowder directly in the pot until it's smooth but still has some texture. (Alternatively, you can transfer it in batches to a blender.)

          After blending, stir in the coconut milk and season the chowder with salt and black pepper to taste. Let it simmer for another 5 minutes to heat through.

            Once done, serve hot in bowls, garnished with fresh chives or parsley for a pop of color and added freshness.
