2 cups dried pinto beans

6 cups water

1 medium onion, chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

1 bay leaf

1 tablespoon olive oil

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

Instructions
 

Rinse the dried pinto beans under cold water to remove any dirt.

    In a large pot, combine the rinsed pinto beans and 6 cups of water. Bring to a boil over high heat.

      Once boiling, reduce heat to a simmer and cover the pot. Let the beans cook for about 1.5 hours, or until the beans are tender, stirring occasionally.

        In a separate skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until translucent.

          Add the minced garlic, cumin, chili powder, smoked paprika, and cook for another minute until fragrant.

            Once the beans are cooked and tender, stir the onion and spice mixture into the pot with the beans. Add the bay leaf and season with salt and pepper to taste.

              Simmer the beans for an additional 20-30 minutes to let the flavors meld together. If you prefer a creamier texture, mash some of the beans with a fork or potato masher.

                Remove the bay leaf before serving.
