Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cornstarch

1/2 cup cream cheese, softened

1/2 cup powdered sugar

1/4 cup caramel sauce (plus extra for drizzling)

1/2 teaspoon sea salt (for topping)

1 cup chocolate chips (optional for added richness)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream the Butters and Sugars: In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).

Add Eggs and Vanilla: Mix in the eggs, one at a time, followed by the vanilla extract, ensuring everything is combined well.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cornstarch. Gradually add this mixture to the wet ingredients until just combined.

Mix in Chocolate Chips: If using, fold in the chocolate chips at this stage for an extra treat.

Make Cheesecake Filling: In a small bowl, beat together the cream cheese, powdered sugar, and 1/4 cup of caramel sauce until smooth and creamy.

Form the Cookies: Scoop tablespoons of the cookie dough onto the prepared baking sheets, leaving some space between each dollop. Press a small indentation into the center of each scoop with your thumb.

Add Cheesecake Filling: Spoon a small amount of the cheesecake filling into each indentation.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers might look soft, but they will set as they cool.

Cool and Decorate: Let them cool on the baking sheet for about 5 minutes before transferring to a wire rack. Once cooled, drizzle with additional caramel sauce and sprinkle with sea salt for that perfect salted caramel finish.

Serve: Enjoy these delicious cookies fresh or store them in an airtight container for up to a week.
