4 large russet potatoes, peeled and diced

1 cup green cabbage, finely shredded

1 cup kale, chopped

1 medium onion, chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup milk (or a dairy-free alternative)

1 tablespoon olive oil

2 tablespoons butter (or vegan butter)

Salt and pepper to taste

Fresh chives for garnish

Instructions
 

In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion and garlic, sautéing until the onion turns translucent, approximately 5 minutes.

    Stir in the diced potatoes and cook for another 5 minutes, allowing the potatoes to absorb the flavors.

      Add the vegetable broth to the pot, bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 15 minutes, or until the potatoes are tender.

        Stir in the shredded cabbage and chopped kale, cooking for another 5 minutes until the greens are wilted.

          Using an immersion blender, blend the soup until smooth and creamy. If you prefer a chunkier texture, blend only half the soup and leave the rest as is.

            Return the pot to low heat, stir in the milk, and season with salt and pepper to your taste.

              Let the soup warm for an additional 5 minutes, then remove from heat.
