1 cup unsweetened shredded coconut

1 cup crushed pineapple, drained

½ cup unsalted butter, softened

½ cup brown sugar, packed

¼ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup chopped macadamia nuts (optional)

½ cup white chocolate chips

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

      Beat in the egg and vanilla extract until well combined.

        In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the wet mixture, stirring until just combined.

            Fold in the shredded coconut, drained crushed pineapple, chopped macadamia nuts (if using), and white chocolate chips until evenly distributed.

              Using a tablespoon or cookie scoop, drop generous balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

                Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are set.

                  Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
