1 can (13.5 oz) coconut milk

2 tablespoons lime juice

Zest of 1 lime

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon honey

1 teaspoon red pepper flakes (adjust to your spice preference)

2 tablespoons fresh cilantro, chopped

Salt and pepper to taste

Cooked jasmine rice, for serving

Instructions
 

In a large mixing bowl, whisk together the coconut milk, lime juice, lime zest, minced garlic, grated ginger, honey, red pepper flakes, and a pinch of salt and pepper until well combined.

    Add the peeled and deveined shrimp to the marinade and toss to coat. Let the shrimp marinate for 15-20 minutes at room temperature, allowing the flavors to meld.

      Heat a large skillet or non-stick pan over medium-high heat. Remove the shrimp from the marinade, reserving the marinade for later.

        Add the shrimp to the hot skillet in a single layer. Cook for about 2-3 minutes on each side, or until they turn pink and opaque.

          Once cooked, pour the reserved marinade into the skillet. Bring to a low simmer and cook for an additional 2-3 minutes to thicken the sauce while stirring occasionally.

            Remove from heat and stir in the chopped cilantro for freshness. Taste and adjust seasoning as needed.

              Serve the coconut lime shrimp over a bed of fluffy jasmine rice, drizzling any extra sauce from the skillet over the top.
