4 boneless, skinless chicken thighs

1 can (13.5 oz) full-fat coconut milk

Zest and juice of 2 limes

2 tablespoons honey

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon ground cumin

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

In a medium bowl, whisk together the coconut milk, lime zest, lime juice, honey, minced garlic, grated ginger, cumin, paprika, salt, and pepper until well combined. This will be your marinade.

    Place the chicken thighs in a large ziplock bag or a shallow dish, and pour the marinade over them. Seal the bag or cover the dish and let the chicken marinate in the refrigerator for at least 1 hour, or up to overnight for maximum flavor.

      Preheat your oven to 400°F (200°C).

        Heat olive oil in a large, oven-safe skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and sear the chicken thighs for about 3-4 minutes on each side, or until golden brown.

          Once the chicken is seared, pour the reserved marinade over the chicken in the skillet. Bring it to a gentle simmer.

            Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Once done, remove from the oven and let the chicken rest for 5 minutes. Garnish with fresh cilantro and serve with lime wedges on the side.
