4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

4 cups vegetable broth

1 bay leaf

1 teaspoon dried thyme

1 cup heavy cream (or coconut cream for a dairy-free version)

Salt and pepper to taste

2 tablespoons olive oil

Fresh dill, chopped for garnish

Instructions
 

Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent.

    Add Garlic and Spices: Stir in the minced garlic, thyme, and bay leaf. Cook for an additional 1-2 minutes until fragrant.

      Cook Potatoes: Add the diced potatoes to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to simmer. Cover and let it cook for 15-20 minutes until the potatoes are tender.

        Blend for Creaminess: Once the potatoes are cooked, remove the bay leaf. Use an immersion blender to blend the soup until smooth, or carefully transfer to a blender in batches for a creamier texture. If you prefer a chunkier soup, blend only half of the mixture.

          Finish with Cream: Return the blended soup to the pot. Stir in the heavy cream and heat gently on low until warmed through. Season with salt and pepper to taste.

            Serve: Ladle the soup into bowls, garnishing with freshly chopped dill for a fresh touch.
