4 large russet potatoes, peeled and cubed

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream

1/2 cup sour cream

1 cup shredded cheddar cheese (plus extra for topping)

4 strips of crispy bacon, crumbled (plus extra for topping)

2 green onions, chopped (for garnish)

1 teaspoon salt (more to taste)

1/2 teaspoon black pepper (more to taste)

1 teaspoon smoked paprika

2 tablespoons olive oil

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Potatoes: Add the cubed potatoes and chicken or vegetable broth to the pot. Bring to a boil, then reduce heat to a simmer. Cover and cook until the potatoes are tender, about 15-20 minutes.

      Mash the Potatoes: Once the potatoes are tender, use a potato masher or fork to mash some of the potatoes in the pot, leaving some chunks for texture.

        Add Creamy Ingredients: Stir in the heavy cream, sour cream, shredded cheddar cheese, smoked paprika, salt, and black pepper. Adjust seasoning as needed. Let it simmer for another 5-10 minutes until heated through.
