Ingredients

1 pound ground beef (or turkey)

1 small onion, finely chopped

1 cup carrots, diced

1 cup green beans, chopped (fresh or frozen)

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

4 cups frozen tater tots

2 cups shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 375°F (190°C).

In a large skillet over medium heat, brown the ground beef and cook until fully browned, about 5-7 minutes. Drain any excess fat.

Add the chopped onion and carrot to the skillet, cooking until the vegetables are tender, about 3-4 minutes.

Stir in the green beans, cream of mushroom soup, beef broth, garlic powder, onion powder, dried thyme, salt, and pepper. Mix well and let it simmer for about 5 minutes.

Transfer the meat and vegetable mixture into a greased 9x13 inch baking dish, spreading it evenly across the bottom.

Arrange the frozen tater tots in a single layer on top of the hotdish mixture.

Sprinkle the shredded cheddar cheese over the tater tots.

Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy and the cheese is melted and bubbly.

Remove from the oven and let it cool slightly. Garnish with fresh chopped parsley before serving.
