4 cups mixed salad greens (romaine, arugula, and spinach)

2 hard-boiled eggs, chopped

1 cup cooked chicken breast, diced

1 avocado, diced

6 strips of crispy bacon, crumbled

1 cup cherry tomatoes, halved

1/2 cup blue cheese, crumbled

1/4 cup red onion, thinly sliced

1/4 cup olive oil

2 tablespoons red wine vinegar (or apple cider vinegar)

1 teaspoon Dijon mustard

Salt and pepper to taste

Prepare the Dressing: In a small bowl, whisk together olive oil, red wine vinegar (or apple cider vinegar), Dijon mustard, salt, and pepper. Taste and adjust seasoning if needed. Set aside.
