Ingredients
  

1 lb (450g) ground beef

1 medium onion, diced

2 cloves garlic, minced

1 medium carrot, chopped

1 medium celery stalk, chopped

1 can (14.5 oz) diced tomatoes, with juices

4 cups beef broth

1 cup elbow macaroni

1 teaspoon dried oregano

1 teaspoon dried basil

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are tender.

    Add the minced garlic and ground beef to the pot. Cook, breaking the meat apart, until browned and no longer pink, about 7-10 minutes. Drain excess fat if necessary.

      Stir in the canned tomatoes (with juices), beef broth, dried oregano, dried basil, bay leaf, salt, and pepper. Bring the mixture to a boil.

        Once boiling, reduce heat to a simmer. Add the elbow macaroni and cook for about 8-10 minutes, or until the macaroni is al dente.

          Remove the bay leaf before serving. Taste and adjust seasoning with more salt and pepper if needed.

            Serve the soup hot, garnished with fresh parsley if desired.
