1 pound beef sirloin, cut into thin strips

2 tablespoons all-purpose flour

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced

1 teaspoon Dijon mustard

1 cup beef broth

1 cup sour cream

1 tablespoon Worcestershire sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooked egg noodles, for serving

Instructions
 

In a bowl, toss the beef strips with flour, salt, and pepper until they are well coated.

    Heat olive oil in a large skillet over medium-high heat. Add the coated beef and sauté until browned (about 2-3 minutes). Remove the beef from the skillet and set aside.

      In the same skillet, add onions and cook until translucent (about 3-4 minutes). Add minced garlic and mushrooms; sauté until mushrooms are golden and moisture is evaporated (about 5 minutes).

        Stir in Dijon mustard and cook for another minute.

          Slowly pour in the beef broth, stirring to combine, and bring to a simmer.

            Return the browned beef to the skillet and add Worcestershire sauce. Simmer for 5-7 minutes to allow the flavors to meld.

              Reduce the heat to low and stir in the sour cream until creamy and well combined. Season with additional salt and pepper if needed.

                Serve over cooked egg noodles, garnished with freshly chopped parsley for a pop of color and flavor.
