6 cups day-old brioche or challah bread, cut into cubes

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/2 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 cup powdered sugar (for dusting)

For the Cinnamon Sugar Topping:

1/4 cup granulated sugar

1 tablespoon ground cinnamon

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and greasing a muffin tin with non-stick spray or butter.

    Prepare the Bread Mixture: In a large mixing bowl, combine the cubed brioche or challah bread with the melted butter. Toss them gently until all bread pieces are coated.

      Mix Wet Ingredients: In another bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and salt until smooth.

        Combine Bread and Mixture: Pour the egg mixture over the bread cubes and gently fold together, ensuring all pieces are soaked but not mashed. Let the mixture sit for about 10-15 minutes to allow the bread to absorb the liquid.

          Prepare Cinnamon Sugar: In a small bowl, mix together the granulated sugar and ground cinnamon for the topping.

            Fill Muffin Tins: Using a spoon, fill each muffin cup with the bread mixture, about 3/4 full. Sprinkle a generous amount of the cinnamon sugar mixture over the top of each muffin.
