Ingredients
  

1 can of refrigerated cinnamon roll dough (8 rolls)

2 cups of diced apples (preferably Granny Smith or Honeycrisp)

1/4 cup brown sugar

1 tsp cinnamon

1/4 tsp nutmeg

1 tbsp lemon juice

1/4 cup chopped pecans (optional)

1/4 cup raisins (optional)

1 cup vanilla ice cream (for serving)

1-2 tbsp icing from the cinnamon roll package

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Cinnamon Rolls: Pop open the can of cinnamon roll dough and separate each roll. Using a rolling pin, gently flatten each roll into a larger round disk, about 1/4 inch thick.

      Make the Apple Filling: In a mixing bowl, combine the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, pecans, and raisins. Toss until the apples are evenly coated.

        Assemble the Cups: Grease a muffin tin lightly. Press each flattened cinnamon roll into the bottom and up the sides of each muffin cup, creating a well for the apple filling.

          Fill the Cups: Spoon the apple mixture into each cinnamon roll cup until generously filled.

            Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the cinnamon rolls are golden brown and the apples are tender.

              Cool and Drizzle: Once baked, remove the pie cups from the oven and let them cool for 5-10 minutes. Drizzle the icing included with the cinnamon rolls over the top of each cup.

                Serve: Carefully remove each apple pie cup from the muffin tin using a spoon. Serve warm with a scoop of vanilla ice cream on top for an extra special touch!
