1 cup unsalted butter, softened

1 cup cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

1 large egg

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup brown sugar

Coarse sugar (for topping)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large bowl, cream together the softened butter, cream cheese, and granulated sugar until smooth and fluffy. This should take about 3-4 minutes.

      Add the vanilla extract and egg to the mixture, blending until fully combined.

        In a separate bowl, whisk together the flour, baking powder, salt, and ground cinnamon. Gradually add this dry mixture to the wet ingredients, mixing just until combined. Be careful not to overmix.

          In a small bowl, combine the brown sugar and a teaspoon of cinnamon for the churro topping. Set aside.

            Scoop out about a tablespoon of dough and roll it into a ball. Roll the dough ball in the brown sugar-cinnamon mixture, ensuring it’s well-coated. Place the ball on the prepared baking sheet, spacing at least 2 inches apart.

              Using a fork, gently flatten the cookie balls slightly. Sprinkle a bit of coarse sugar on top of each cookie for an extra crunch.

                Bake for 12-15 minutes or until the edges are golden but the centers remain soft. They will appear slightly puffy but will flatten as they cool.

                  Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
