1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/4 cup granulated sugar

2 teaspoons ground cinnamon

Prepare the Cream Cheese Filling: In a medium bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy. Set aside.

    Make the Cookie Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.

        Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up.

          Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

            Form the Cookies: Remove the chilled dough from the refrigerator. Scoop out a tablespoon of dough, flatten it slightly, and place about a teaspoon of the cream cheese filling in the center. Fold the dough around the filling to completely enclose it and roll it back into a ball. Repeat with the remaining dough and filling.
