Ingredients

1 sleeve of saltines (about 40 crackers)

1 cup unsalted butter

1 cup packed brown sugar

2 cups semi-sweet chocolate chips

1 cup crushed peppermint candies (or 1 teaspoon peppermint extract for flavor)

Sea salt for sprinkling

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with aluminum foil, leaving an overhang for easy removal later. Place the saltines in a single layer on the baking sheet, covering the entire surface.

In a medium saucepan over medium heat, melt the butter and brown sugar together. Stir constantly until the mixture comes to a rolling boil. Allow it to boil for 3 minutes without stirring.

Remove the saucepan from the heat and immediately pour the caramel mixture over the saltines, spreading it evenly with a spatula to ensure all crackers are covered.

Bake in the preheated oven for 5-7 minutes, until the caramel is bubbly and slightly darkened.

Remove from the oven and sprinkle the chocolate chips evenly over the hot caramel layer. Allow them to sit for 2-3 minutes so they melt. Once melted, use a spatula to spread the chocolate into an even layer.

If using crushed peppermint candies, sprinkle them over the chocolate while it's still warm. If using peppermint extract, add it to the melted chocolate before spreading.

Allow the entire pan to cool at room temperature for about 30 minutes, then place it in the refrigerator for an additional 30-40 minutes, or until the chocolate is fully set.

Once hardened, lift the foil out of the pan and break the crack into irregular pieces with your hands or a sharp knife.

Store in an airtight container for up to two weeks, or package in festive bags to give as gifts!
