3 ripe bananas, mashed

1/3 cup tahini

1/2 cup brown sugar

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup chocolate chips (dark or semi-sweet)

1/4 cup chopped walnuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with a bit of oil or cooking spray.

    In a large mixing bowl, combine the mashed bananas and tahini, stirring until smooth.

      Add the brown sugar and granulated sugar to the banana-tahini mixture, mixing until well incorporated.

        Next, add the eggs one at a time, stirring in the vanilla extract with the second egg. Mix until combined.

          In a separate bowl, whisk together the baking soda, baking powder, salt, and flour. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

            Gently fold in the chocolate chips and walnuts if using. Be careful not to overmix; a few lumps are okay!

              Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

                Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted in the center comes out clean.

                  Once baked, let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
