Ingredients

1 cup dark chocolate chips (preferably dairy-free)

1/2 cup creamy peanut butter

1/4 cup maple syrup

1/2 teaspoon vanilla extract

1 cup fresh raspberries

Pinch of salt

Optional: 1/4 cup crushed nuts (e.g., almonds or hazelnuts) for added crunch

Instructions

Begin by lining a muffin tin with paper liners or silicone molds for easy removal later.

In a microwave-safe bowl, combine the dark chocolate chips and a pinch of salt. Melt them in the microwave in 30-second intervals, stirring until smooth and fully melted.

Spoon approximately 1 tablespoon of melted chocolate into the bottom of each lined cup, tilting it slightly to coat the base. Place the tray in the refrigerator to set for about 10-15 minutes.

While the chocolate is setting, prepare the peanut butter filling. In a medium bowl, mix the creamy peanut butter, maple syrup, and vanilla extract until well combined and smooth.

Remove the muffin tin from the refrigerator. Add a dollop of the peanut butter mixture (about 1 tablespoon) on top of the chocolate layer in each cup.

Carefully place a few fresh raspberries on top of the peanut butter filling in each cup, pressing lightly to embed them slightly.

Pour the remaining melted chocolate over the raspberry and peanut butter layers, ensuring they are fully covered.

If desired, sprinkle crushed nuts on top for an added crunch before the chocolate hardens.

Return the muffin tin to the refrigerator and allow to set for at least 1 hour until completely firm.

Once set, gently peel away the liners to remove the chocolate raspberry peanut butter cups. Enjoy your delicious creation!
