1 cup all-purpose flour

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

½ cup granulated sugar

½ cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

½ cup creamy peanut butter

½ cup semi-sweet chocolate chips

¼ cup powdered sugar (for dusting, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini muffin liners.

    Prepare the Dough: In a medium bowl, whisk together the flour, baking soda, and salt. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

      Mix in Wet Ingredients: Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

        Form the Cookie Cups: Scoop about 1 tablespoon of dough into each muffin cup, pressing it down slightly to create a small cup shape. Bake in the preheated oven for 8-10 minutes, until the edges are lightly golden.

          Add the Peanut Butter: Remove the cookie cups from the oven. While they are still warm, use the back of a measuring spoon to press down the center of each cookie to create a well. Let cool for about 5 minutes.

            Fill with Peanut Butter: Spoon about 1 teaspoon of peanut butter into each cookie cup, filling the well.

              Melt the Chocolate: In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until smooth. Drizzle or spoon the melted chocolate over the filled cookie cups.

                Chill and Serve: If desired, sprinkle the tops with powdered sugar for an extra touch of sweetness. Allow the cookie cups to cool completely. Serve at room temperature or chilled.
