Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

¾ cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

1 cup semi-sweet chocolate chips

1 cup mini marshmallows

Additional chocolate chips and marshmallows for topping

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream Butter and Sugars: In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, mixing until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt until evenly mixed.

Mix Together: Gradually add the dry flour mixture to the wet mixture, stirring until fully incorporated. Don’t overmix; stop when you can no longer see dry flour.

Fold in Chocolate Chips and Marshmallows: Gently fold in the semi-sweet chocolate chips and mini marshmallows using a spatula or wooden spoon.

Scoop Cookies: Using a cookie scoop or tablespoon, drop heaping amounts of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Add Toppings: Press a few extra chocolate chips and mini marshmallows onto the top of each cookie for added visual appeal.

Bake: Bake in the preheated oven for 10-12 minutes, or until cookies are set but still soft in the middle. They will continue to cook slightly as they cool.

Cool: Remove from the oven and let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
