Ingredients

2 large ripe bananas

1/2 cup creamy peanut butter

1 cup dark chocolate chips

1 tablespoon coconut oil (optional for smoother chocolate)

Pinch of sea salt (optional)

1/4 cup chopped nuts or sprinkles (optional for garnish)

Instructions

Prepare the Bananas: Peel the bananas and slice them into 1/2 inch thick rounds. You should have about 18-20 slices total.

Assemble the Sandwiches: Take one banana slice and spread a generous amount of peanut butter on the flat side. Top with another banana slice to form a sandwich. Repeat this process until all banana slices are used.

Freeze the Sandwiches: Place the assembled banana-peanut butter sandwiches on a baking sheet lined with parchment paper. Make sure they are not touching. Put the baking sheet in the freezer for at least 1-2 hours, or until the sandwiches are fully frozen.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using). Heat in the microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.

Dip the Sandwiches: Remove the frozen banana sandwiches from the freezer. One by one, dip each sandwich into the melted chocolate, making sure it’s fully coated. Let any excess chocolate drip off before placing it back on the baking sheet.

Add Garnish (Optional): While the chocolate is still wet, sprinkle some chopped nuts or colorful sprinkles on top for an extra touch.

Final Freeze: Once all the sandwiches are coated in chocolate, place the baking sheet back in the freezer for about 30 minutes, or until the chocolate is set.

Serve: Once the chocolate is firm, the Chocolate Covered Frozen Banana Peanut Butter Sandwiches are ready to enjoy! Store any leftovers in an airtight container in the freezer.

Prep Time: 15 minutes | Total Time: 2 hours 30 minutes | Servings: 9-10 sandwiches
