Chocolate Churro Pies

1 cup all-purpose flour

2 tablespoons sugar

¼ teaspoon salt

½ teaspoon cinnamon

½ cup water

2 tablespoons unsalted butter

1 cup semi-sweet chocolate chips

¼ cup heavy cream

1 teaspoon vanilla extract

2 tablespoons melted butter (for brushing)

¼ cup granulated sugar (for coating)

Extra cinnamon for dusting

Instructions
 

In a medium saucepan, combine water, butter, sugar, and salt. Bring to a gentle boil over medium heat.

    Once boiling, remove from heat and stir in flour and cinnamon until a dough forms and pulls away from the sides.

      Allow the dough to cool slightly, then knead it in the bowl until smooth.

        Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

          Roll out the dough on a floured surface to about ¼ inch thick. Cut into circles using a round cutter (approximately 3-4 inches in diameter).

            On half of the circles, spoon about a teaspoon of chocolate filling (which will be made next) and leave the edges clear.

              For the Chocolate Filling: In a microwave-safe bowl, combine chocolate chips and heavy cream. Heat for 30 seconds, then stir until smooth. Add vanilla extract and mix well.

                Place another dough circle over the filled ones, gently pressing the edges to seal. Use a fork to crimp the edges and fully close the pies.

                  Brush the tops of the pies with melted butter.

                    Bake in the preheated oven for about 15-18 minutes, or until golden brown.

                      In a shallow dish, combine ¼ cup sugar and extra cinnamon. Once the churro pies are out of the oven, immediately toss them in the sugar mixture while still warm.

                        Allow to cool slightly before serving.
