Ingredients

2 cups pecan halves

1 cup granulated sugar

1/4 cup unsalted butter

1/2 cup heavy cream

1 teaspoon vanilla extract

1/4 teaspoon salt

12 ounces semi-sweet chocolate chips

Sea salt for garnish (optional)

Instructions

Prepare the Pecan Base: In a large skillet over medium heat, toast the pecan halves for about 5-7 minutes, stirring often, until they are fragrant and lightly golden. Remove from heat and allow to cool slightly.

Make the Caramel: In a medium saucepan, combine the granulated sugar and butter over medium heat, stirring constantly until melted. Once melted, stop stirring and allow the mixture to boil undisturbed for about 5 minutes until it turns a deep amber color.

Add Cream: Carefully whisk in the heavy cream, vanilla extract, and salt. Be cautious as the mixture may bubble vigorously. Stir until smooth and fully combined. Allow the caramel to cool for a few minutes.

Combine Pecans and Caramel: Line a baking sheet with parchment paper. Spoon small portions of the toasted pecan halves into clusters on the prepared baking sheet. Drizzle or spoon the warm caramel over each pecan cluster, ensuring they’re well-coated.

Melt Chocolate: In a microwave-safe bowl, heat the chocolate chips in 30-second intervals, stirring in between, until fully melted and smooth.

Coat Caramel Clusters: Using a spoon, drizzle or pour the melted chocolate over the caramel-coated pecans, covering them generously.

Chill and Set: Sprinkle a small pinch of sea salt on top of each cluster if desired. Then, place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate has fully set.

Serve: Once set, gently remove the turtle clusters from the parchment paper. Store in an airtight container at room temperature or in the fridge for up to one week.
