2 tablespoons olive oil

2 tablespoons chipotle in adobo sauce, minced

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 tablespoon brown sugar

For the Mango Avocado Salsa:

1 ripe mango, diced

1 ripe avocado, diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Marinate the Salmon: In a small bowl, mix the olive oil, minced chipotle, smoked paprika, garlic powder, brown sugar, salt, and pepper. Rub this mixture generously over the salmon fillets, ensuring they are well coated. Allow them to marinate for at least 20 minutes at room temperature.

    Prepare the Salsa: In a medium bowl, combine the diced mango, diced avocado, red onion, jalapeño, and cilantro. Drizzle with lime juice and season with salt. Gently toss to combine. Taste and adjust seasoning if necessary. Set aside.
