Instructions
In a medium bowl, combine the olive oil, minced chipotle in adobo sauce, lime juice, garlic powder, cumin, salt, and pepper. Mix well.
Add the shrimp to the marinade, ensuring they're thoroughly coated. Let marinate for 15-20 minutes.
Preheat a grill or skillet over medium-high heat.
Once hot, add the marinated shrimp in a single layer, cooking for 2-3 minutes on each side or until they are pink and opaque. Remove from heat.
While the shrimp are cooking, lightly toast the corn tortillas on a separate skillet for about 30 seconds per side, or until warm and flexible.
Assemble the tacos by placing a portion of shrimp onto each tortilla. Top with shredded cabbage, sliced avocado, and a sprinkle of fresh cilantro.
Serve with lime wedges on the side for an extra burst of flavor.
