Ingredients
  

2 cups cooked chicken breast, shredded or diced

4 cups mixed salad greens (such as romaine, spinach, and arugula)

1 cup shredded red cabbage

1 cup shredded carrots

1/2 cup sliced green onions

1/2 cup roasted peanuts (or cashews)

1/4 cup fresh cilantro, chopped

1/2 cup mandarin oranges, drained

1/4 cup toasted sesame seeds

For the Dressing:

1/4 cup soy sauce

2 tablespoons rice vinegar

2 tablespoons sesame oil

1 tablespoon honey or agave syrup

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon lime juice

Salt and pepper to taste

Instructions
 

In a large bowl, combine the salad greens, red cabbage, carrots, green onions, and mandarin oranges. Gently toss to mix.

    In a separate bowl, whisk together all the dressing ingredients—soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, lime juice, salt, and pepper—until well combined.

      Add the shredded chicken to the salad and pour half of the dressing over the top. Toss to coat the ingredients evenly.

        If desired, drizzle additional dressing over the salad for extra flavor.

          Serve the salad topped with roasted peanuts and toasted sesame seeds.

            Garnish with fresh cilantro before serving for a burst of freshness.
