1 pound (450g) beef flank steak, thinly sliced against the grain

2 large onions, thinly sliced

3 cloves garlic, minced

1 inch fresh ginger, grated

1 bell pepper (red or green), sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional for extra depth)

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 teaspoon sesame oil

Salt and pepper, to taste

Green onions, chopped, for garnish

Sesame seeds, for garnish

Instructions
 

In a mixing bowl, combine the sliced beef with soy sauce, oyster sauce, cornstarch, and a pinch of salt and pepper. Marinate for at least 15 minutes to tenderize the beef and infuse flavor.

    Heat a large wok or skillet over high heat and add the vegetable oil. Once the oil is shimmering, add the marinated beef, spreading it out in a single layer. Sear for 2-3 minutes until browned on one side. Stir and cook for an additional minute until just cooked through. Remove the beef from the skillet and set aside.

      In the same wok, add a bit more oil if necessary, and toss in the sliced onions. Stir-fry for about 2-3 minutes until they start to soften.

        Add the minced garlic, grated ginger, and bell pepper to the onions. Continue to stir-fry for another 2 minutes until the bell pepper is tender-crisp and the onions are caramelized.

          Return the cooked beef to the wok and add sesame oil. Stir everything together and cook for an additional minute to heat through. Adjust seasoning with salt and pepper, if necessary.

            Once everything is well combined, remove from heat, and transfer to a serving platter.

              Garnish with chopped green onions and a sprinkle of sesame seeds before serving.
