300g spaghetti

300g large prawns, peeled and deveined

4 tablespoons olive oil

4 cloves garlic, minced

1-2 red chillies, finely chopped (adjust to taste)

1/2 cup white wine (or chicken broth)

1 tablespoon lemon juice

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Grated Parmesan cheese for serving

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of the pasta cooking water and drain the pasta. Set aside.

    Sauté Garlic and Chillies: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped chillies, sauté for 1-2 minutes until fragrant, but be careful not to burn the garlic.

      Add Prawns: Increase the heat to medium-high and add the prawns to the skillet. Cook for about 2-3 minutes until they turn pink and opaque, ensuring they are cooked through.

        Deglaze with Wine: Pour in the white wine (or broth) and lemon juice. Let it simmer for about 2-3 minutes, allowing the alcohol to evaporate and the sauce to reduce slightly.

          Combine Pasta and Sauce: Add the drained spaghetti to the skillet, tossing it gently with the prawn mixture. If the pasta seems dry, add some reserved pasta water, a little at a time, until your desired consistency is reached.

            Season and Serve: Stir in the chopped parsley and season with salt and pepper to taste. Plate the pasta, adding a sprinkle of grated Parmesan on top if desired. Serve hot, garnished with extra parsley and chili flakes for added heat.
