Chili Queso Dip

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 jalapeño, finely diced (seeds removed for less heat)

1 can (14.5 oz) diced tomatoes, drained

1 can (15 oz) black beans, rinsed and drained

1 cup shredded cheddar cheese

1 cup cream cheese, softened

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and diced jalapeño. Cook for an additional 2-3 minutes until fragrant.

      Add the drained diced tomatoes and black beans to the pot. Mix well and let it cook for about 3-4 minutes until everything is heated through.

        Lower the heat to medium-low and stir in the softened cream cheese until melted and combined.

          Gradually add the shredded cheddar cheese while stirring continuously until fully melted and creamy.

            Season the dip with ground cumin, chili powder, salt, and pepper to taste. Mix well and allow it to heat for another 2-3 minutes.

              Once the dip is smooth and creamy, remove from heat.

                Transfer to a serving bowl and garnish with freshly chopped cilantro on top.

                  Serve warm with tortilla chips for dipping.
