Instructions
Preheat your grill to medium-high heat.
In a small bowl, whisk together the olive oil, chili powder, smoked paprika, lime zest, lime juice, cayenne pepper, and salt.
Brush the mixture generously over each ear of corn until they are well coated.
Place the corn directly on the grill and cook for about 10-12 minutes, turning occasionally until the kernels are tender and have nice grill marks.
Remove the corn from the grill and let it cool slightly.
If desired, sprinkle the grilled corn with crumbled cotija cheese for added creaminess and flavor.
Garnish with chopped cilantro and a squeeze of fresh lime juice before serving.
Notes
Adjust cayenne pepper for desired spiciness.
