12 large jalapeno peppers

1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup cooked and crumbled chorizo or ground beef

1/4 cup fresh cilantro, chopped

2 cloves garlic, minced

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup breadcrumbs (optional for topping)

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prep the Peppers: Carefully cut each jalapeno in half lengthwise. Use a spoon to scrape out the seeds and membranes, adjusting based on your heat preference.

      Make the Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled chorizo, cilantro, minced garlic, cumin, smoked paprika, salt, and pepper. Mix until well combined and creamy.

        Stuff the Peppers: Spoon the cheese mixture generously into each jalapeno half, packing it in well. If you like a crunchy topping, sprinkle breadcrumbs over the top of the stuffed peppers.

          Bake: Arrange the stuffed jalapenos on a baking sheet lined with parchment paper. Drizzle a little olive oil over them for added moisture and flavor. Bake for about 20-25 minutes, or until the jalapenos are tender and the cheese is bubbly and lightly golden.
