Ingredients
  

4 large russet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup homemade or canned chili (with or without beans)

1/4 cup sour cream

2 green onions (sliced)

1/4 cup jalapeños (sliced, optional)

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 425°F (220°C).

      - Scrub the russet potatoes and cut them into thick fries or wedges, about 1/2 inch wide.

        - In a large bowl, toss the potato wedges with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until well coated.

          Bake the Fries:

            - Spread the fries in a single layer on a baking sheet lined with parchment paper. Make sure they are not crowded for optimal crispiness.

              - Bake for about 30-35 minutes, flipping them halfway through, until they are golden brown and crispy.

                Heat the Chili:

                  - While the fries are baking, heat your chili in a pot over medium heat until hot. If using canned chili, simply heat it according to the package instructions.

                    Assemble the Chili Cheese Fries:

                      - Once the fries are out of the oven, sprinkle the shredded cheddar cheese evenly over the hot fries.

                        - Return the fries to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
