4 large russet potatoes

1 cup chili (canned or homemade)

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup chopped green onions

1/4 cup jalapeños, sliced (optional)

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon paprika

Preheat your oven to 400°F (200°C).

    Scrub the potatoes under running water and pat them dry. Pierce each potato several times with a fork.

      Rub the potatoes with olive oil, and sprinkle with salt, pepper, garlic powder, and paprika for extra flavor.

        Place the potatoes directly on the oven rack or on a baking sheet, and bake for 45-60 minutes or until they are tender and easily pierced with a fork.

          While the potatoes are baking, heat the chili in a saucepan over medium heat until warm.

            Once the potatoes are done, remove them from the oven and let them cool for a few minutes.

              Cut a slit down the center of each potato and gently squeeze the ends to fluff the insides.

                Spoon a generous amount of chili into each potato, followed by a sprinkle of shredded cheddar cheese.

                  Return the loaded potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.

                    Remove the baked potatoes from the oven and top each with a dollop of sour cream, chopped green onions, and jalapeño slices if you like it spicy.
