1 lb boneless, skinless chicken breasts

1 cup wild rice, rinsed and drained

1 medium onion, chopped

2 carrots, sliced

2 celery stalks, sliced

3 cloves garlic, minced

6 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion, sliced carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.

    Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Place the chicken breasts into the pot and pour in the chicken broth. Add the dried thyme, dried rosemary, salt, and pepper. Bring to a boil.

        Once boiling, reduce the heat and let it simmer for about 15 minutes, or until the chicken is cooked through.

          Remove the chicken from the pot and shred it with two forks. Return the shredded chicken back to the pot.

            Stir in the wild rice and continue to simmer for about 30-35 minutes, or until the rice is tender and cooked through.

              Once the wild rice is ready, stir in the heavy cream and adjust the seasoning if needed. Let it simmer for an additional 5 minutes.

                Remove from heat and ladle the soup into bowls. Garnish with fresh chopped parsley before serving.
