1 medium onion, chopped

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, diced

4 cups chicken broth

1 pound boneless, skinless chicken thighs (or breast), cut into bite-sized pieces

4 medium potatoes, diced (Yukon Gold preferred)

1 teaspoon dried thyme

½ teaspoon dried rosemary

Salt and pepper to taste

2 cups fresh spinach or kale, roughly chopped

Juice from 1 lemon

Fresh parsley for garnish

Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.

    Stir in the minced garlic, sliced carrots, and diced celery. Cook for an additional 3-4 minutes, allowing the vegetables to soften and the flavors to meld.

      Add the chicken broth to the pot and bring it to a gentle simmer.
