400g chicken breast, diced

2 cups chicken broth

1 cup elbow macaroni

1 cup full-fat milk

1 cup cream

1 medium onion, finely chopped

2 garlic cloves, minced

1 cup carrots, diced

1 cup celery, diced

2 tablespoons soy sauce

1 teaspoon ground black pepper

1 bay leaf

3 tablespoons vegetable oil

Salt to taste

Chopped green onions for garnish

Instructions
 

Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and golden brown.

    Add the diced chicken breast to the pot and cook until lightly browned and no longer pink, about 5-7 minutes.

      Stir in the carrots and celery, cooking for an additional 3 minutes until softened.

        Pour in the chicken broth and add the bay leaf, soy sauce, and ground black pepper. Bring to a boil, then reduce the heat to a simmer.

          Add the elbow macaroni to the pot and cook until al dente, according to package instructions, usually about 8-10 minutes.

            Once the macaroni is cooked, mix in the milk and cream. Stir gently to combine and let it simmer for another 5 minutes until heated through.

              Taste and season with salt as needed. Remove the bay leaf before serving.

                Serve the sopas hot, garnished with chopped green onions for an added burst of flavor.
