2 chicken breasts, thinly sliced

200g ramen noodles

1 tablespoon sesame oil

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 red bell pepper, julienned

1 yellow bell pepper, julienned

1 carrot, julienned

2 scallions, chopped

2 garlic cloves, minced

1 inch ginger, grated

1 teaspoon chili paste (optional for heat)

Sesame seeds for garnish

Cook the Ramen: In a large pot of boiling water, cook the ramen noodles according to package instructions. Drain and rinse under cold water, then set aside.

    Prepare the Chicken: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the sliced chicken breasts and cook for about 5-7 minutes, or until fully cooked and browned. Remove the chicken from the skillet and set aside.

      Stir Fry the Vegetables: In the same skillet, add a little more sesame oil if necessary, then toss in the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant. Add the julienned bell peppers and carrots, and stir-fry for 3-4 minutes until slightly tender but still crisp.

        Combine Ingredients: Return the cooked chicken to the skillet and add the drained ramen noodles. Pour in the soy sauce, oyster sauce, hoisin sauce, and chili paste (if using). Toss everything together until well coated and heated through, about 2-3 minutes.

          Finish and Serve: Stir in the chopped scallions and cook for an additional minute. Remove from heat and serve hot, garnished with sesame seeds.
