Ingredients
  

1 pound ground chicken

1/2 cup breadcrumbs (preferably Italian)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 teaspoon lemon zest

1 large egg

Salt and pepper to taste

1/4 cup capers, rinsed and drained

1/2 cup chicken broth

Juice of 1 lemon

2 tablespoons olive oil

Fresh parsley for garnish

Preheat oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Mix the meatball ingredients: In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, lemon zest, egg, salt, and pepper. Mix until well combined but do not overwork the meat.

      Form meatballs: Using your hands, scoop out portions of the mixture and roll them into meatballs, about 1.5 inches in diameter. Place them on the prepared baking sheet.

        Bake the meatballs: Bake the meatballs in the preheated oven for 20-25 minutes or until they are cooked through and golden brown.

          Prepare the piccata sauce: In a large skillet, heat the olive oil over medium heat. Once hot, add the capers and cook for 1-2 minutes until fragrant.

            Add broth and lemon juice: Pour in the chicken broth and lemon juice, scraping any browned bits off the bottom of the pan. Allow the sauce to simmer for 5 minutes.

              Combine meatballs and sauce: Once the meatballs are done baking, transfer them to the skillet with the piccata sauce. Simmer for an additional 5 minutes to allow flavors to meld.

                Serve: Garnish with fresh parsley before serving. Enjoy the meatballs over pasta, rice, or as an appetizer!
