2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup mozzarella cheese, grated

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 package of puff pastry sheets (2 sheets)

1 egg, beaten (for egg wash)

1 cup marinara sauce (for dipping)

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the shredded chicken, ricotta cheese, mozzarella cheese, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are combined.

      On a clean surface, roll out the puff pastry sheets to smooth them out and slightly thin them. Cut each sheet into 4 equal squares (total 8 squares).

        Spoon a generous amount of the chicken mixture (about 2 tablespoons) in the center of each square.

          Fold the corners of the pastry over the filling to form a pillow shape. Press the edges together to seal, and use a fork to crimp the edges for extra security.

            Brush the tops of each pillow with the beaten egg to give them a golden color while baking.

              Place the pillows on the prepared baking sheet, spaced evenly apart.

                Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed up.

                  While the pillows are baking, heat the marinara sauce in a small saucepan over low heat.

                    Once cooked, let the pillows cool for a couple of minutes before serving. Serve warm with marinara sauce for dipping and garnish with fresh basil leaves if desired.
