1 pound ground chicken

1/2 cup breadcrumbs (preferably panko)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

2 cloves garlic, minced

1 large egg

1/2 teaspoon Italian seasoning

Zest of 1 lemon

For the Piccata Sauce:

1 tablespoon olive oil

1 tablespoon butter

2 garlic cloves, minced

1/2 cup white wine (such as Sauvignon Blanc)

1 cup chicken broth

2 tablespoons capers, rinsed and drained

Juice of 1 lemon

Salt and pepper to taste

Fresh parsley for garnish

Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the meatball mixture: In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, egg, salt, pepper, Italian seasoning, and lemon zest. Mix well until all ingredients are fully combined.

      Form the meatballs: Using your hands, shape the mixture into meatballs, about 1-inch in diameter, and place them on the prepared baking sheet.

        Bake the meatballs: Bake the chicken meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown.

          Prepare the piccata sauce: While the meatballs are baking, heat olive oil and butter in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
